Ha Gobo burdock (Arctium lappa) is a Japanese variety grown for its long, tender, earthy-flavored roots, prized in Asian cuisine and herbal medicine. Non-GMO, open-pollinated, cool-season annual. Roots are crisp with nutty undertones; young leaves and stems are also edible when cooked.

The thick white stalk averages about 12" long with light-green, tender leaves. The edible root averages about 6" long and is delicious fresh in salads, with a pleasant earthy aroma. Versatile in the kitchen for stir-fries, soups, and pickling.

Grow style:

• Containers: Needs deep containers (at least 18–24 inches) for full root development.

• In-ground: Thrives in loose, sandy, well-drained soil free of rocks for straight root growth.

• Raised beds: Works well if bed depth is sufficient.

• Hydroponics: Not recommended.

• Small-space gardens: Possible in deep planters.

Prolific? Produces one large root per plant, with leaves available for harvest during growth.

Sowing Instructions: Direct sow in early spring as soon as soil can be worked. Plant seeds 1/2 inch deep, spacing 6 inches apart. Thin to strongest plants. Roots mature in 4–5 months; harvest before flowering for best flavor.
